3 Simple Summer Recipes

Keeping it simple in with simple summer recipes is easier than ever! Now is the time to get out of your grind. With your local farmer’s markets bursting with the best of the season, put a spin on cauliflower and broccoli, Try making a summer soup, a simple green smoothie or a fresh seasonal  this week.

Sunny Summer Artichoke Soup

imgres-28What better way to go dairy-free with a soup that won’t weigh you down this summer. This summer recipe is a delicious soup using cauliflower to make it creamy and lemon to give it a sun-kissed taste!

Ingredients:

• 2 Tbsp. ghee (alternative to butter and healthier too!)
• ½ onion, chopped
• 2 celery stalks, chopped
• 2-3 cloves minced garlic
• 1 quart chicken or vegetable broth
• 2 cans (or packages) artichoke hearts, chopped
• 1 head of cauliflower, chopped
• Juice of ½ – 1 lemon
• 1 tsp. dried tarragon (optional)
• sea salt and pepper to taste

Directions:

– In a large pot, melt ghee over medium heat snd auté onion, celery and garlic until soft.
– Add 1 cup of the  broth and cauliflower; cover pot to steam the cauliflower.

– Once cauliflower is tender, add remainder of the broth.
– Add artichoke hearts and continue to simmer 10 minutes.
– Puree soup in pot with an immersion blender. (You can also pour the soup into a blender to blend then return soup to pot.)
– Add lemon juice (and tarragon if desired) and continue heating until serving temperature.
– Season with salt and pepper to taste and enjoy!

Simple Summer Smoothie

Green smoothies are PERFECT addition to your list of summer recipes. Actually, they are perfect all year round. This summer experiment with your choice of greens while still keep ’em simple and easy. You’ll keep your energy and glow going all summer!

Ingredients:

• 1-2 handfuls of chard, kale, or dandelion greens (instead of spinach)
– 1 cup coconut milk
– 1/2 cup frozen mango chunks
– 1/2 cup frozen pineapple chunks
– 1/2 frozen banana
– 1 serving vegan protein powder, I recommend doTERRA vegan protein powder

– Place all ingredients in a high-speed blender and blend until smooth.
– Makes two servings.

Summer Salad

Summer is the best time to add variety to your salads. This is one of my favorite simple summer recipes, Perfect on a hot summer day!

Ingredients:

• 1 bunch broccoli, chopped
• 1 15-ounce can chickpeas, drained and rinsed
• 1 cucumber, diced
• 1 cup cherry tomatoes, halved
• 1/2 cup red onion, diced
• 2 Tbsp. Dijon mustard
• 2 Tbsp. extra virgin, cold pressed olive oil
• 2 Tbsp. lemon juice
• 1/4 tsp. sea salt
• 1/4 tsp. black pepper

Directions:

– Wash broccoli, then blanch on top of stove until just tender, about one minute; drain and pat leaves dry.
– Combine broccoli, chickpeas, cucumbers, tomatoes, and red onion in a bowl, set aside.

– To prepare dressing: mix mustard, olive oil, lemon juice, salt, and pepper in a small bowl, until well combined.
– Pour dressing over salad, toss until coated, and enjoy at room temperature. Can be stored in fridge for up to 1 week.
