4th of July Sugar-Free Summer Treat

This recipe is another super simple and super yummy one. The cashew cream blends the berries and creates a perfect was to stabilize blood sugar from the natural sugar of the fruit!

Ditch the “cool whip” for good! I use cashew cream in this recipe because cashews are a great mineral source,contain 31% of the daily recommended value for copper, along with 23% for manganese, 20% for magnesium and 17% for phosphorus,add to that 12% of the daily recommended value for vitamin K. This recipe not only tastes good, but it is an amazing way to boost your body’s health this holiday weekend.

Red, White and Blue Fruit Salad

1 cup cashews, soaked for at least 4 hrs.

3 pitted dates or 2-3 Tbsp. local raw honey

1 tsp. vanilla

Water as needed

1 lb. organic strawberries, hulled and halved

11 oz. organic blueberries

¼ cup mint, roughly chopped

✴ In a food processor add cashews, dates, vanilla and about 2 tablespoons warm water; puree until smooth; add more water as needed

✴ In a large serving bowl toss together strawberries, blueberries and mint

✴ Dish fruit mixture in individual bowls and top with cashew cream

✴ Makes 8 servings

There is an ingredient in cashews called proanthocyanidins, which contain flavanols that inhibit the ability of cancer cells to divide and multiply, reducing incidences of colon cancer.

So, yes… cashews can also be considered a cancer-preventative food. And, surprisingly, cashews contain zero cholesterol.
