Shortbread Cookies
Gluten-free Shortbread Cookies
A great recipe for Holiday parties, especially for those with food allergies. Know someone who is on a Gluten-Free diet? This is a perfect gift.
Makes 12 cookies
INGREDIENTS
- 1/4 coconut flour
- 1/4 cup whole bean flour or brown rice flour
- 1/4 cup arrowroot flour
- 1/4 tsp cinnamon 1/2 cup butter
- 1/4 to 1/3 cup maple sugar or 1/4 cup organic sugar
- 1/2 tsp vanilla
- 1/2 cup pecans, chopped
DIRECTIONS
- Cream the butter, maple syrup and sugar until smooth.
- Add the flours, cinnamon and vanilla
- Add pecans and beat until completely mixed.
- Drop small balls of dough onto a baking sheet and press down with a fork.
- Bake at 325 degrees F for 15-20 minutes
