Shortbread Cookies

Gluten-free Shortbread Cookies

A great recipe for Holiday parties, especially for those with food allergies. Know someone who is on a Gluten-Free diet? This is a perfect gift.

Makes 12 cookies

INGREDIENTS

  • 1/4 coconut flour
  • 1/4 cup whole bean flour or brown rice flour
  • 1/4 cup arrowroot flour
  • 1/4 tsp cinnamon 1/2 cup butter
  • 1/4 to 1/3 cup maple sugar or 1/4 cup organic sugar
  • 1/2 tsp vanilla
  • 1/2 cup pecans, chopped

DIRECTIONS

  1. Cream the butter, maple syrup and sugar until smooth.
  2. Add the flours, cinnamon and vanilla
  3. Add pecans and beat until completely mixed.
  4. Drop small balls of dough onto a baking sheet and press down with a fork.
  5. Bake at 325 degrees F for 15-20 minutes
