Eat More Eggplant This Valentine's Day
Most people are not buying eggplant as often as they should. It is an overlooked health benefit in the nutrition world, which is why I want to write about it today. Eggplant has tons of health benefits, including high amounts of vitamins, including vitamin K and vitamin B. Eggplants contain certain essential phyto nutrients which improve blood circulation and nourish the brain. All this said, there are 3 main reasons to add eggplant into your weekly diet and I am listing them below.
1. Weight loss! Eggplants have only 35 calories per cup and contain NO fat! They are also very high in fiber, which attacks belly fat and promotes fantastic digestional tract health.
2. Eggplants are high in bioflavonoids, which are known to control high blood pressure and relieve stress. Eating an eggplant meal once a week (when grilled and not soaked in egg yolk, battered and fried) can lower your blood pressure and increase a better mood.
3. Manage diabetes. Yes, diabetes. Since eggplants are high in fiber, they also help to better control blood sugar and diabetes. Plus, they are water-based and will help keep you fuller for a longer period of time, which prevents needless sugary snacking!
