1 Cup of Butter for Baking           SWAP        3/4 Cup Apple Sauce + 1/4 Butter

8 Ounces of Cream Cheese         SWAP        8 Ounces of Plane Yogurt

1 Cup of Crème Fraiche               SWAP        1 Cup Yogurt Cheese Made From Low Fat or Nonfat Yogurt

1 Cup of Heavy Cream                 SWAP        2 tsp Cornstarch or 1 Tbsp Flour Whisked Into 1 Cup Nonfat Milk   (in recipes, not for whipping)

1 Cup Sour Cream                        SWAP        1 Cup Low Fat Cottage Cheese + 2 Tbsp Skim Milk + 1 Tbsp Lemon Juice

1 Cup Fat for Sautéing                 SWAP        4 Cups Low Fat Stock, Fruit Juice or Wine & Sauté Until Liquid Evaporates
