Holiday Ginger Chicken
Sesame Ginger Chicken
A nice dish to liven up the holiday party and still have a seasonal taste.
Serves 6
INGREDIENTS
- 2 chicken breasts, cut into strips*
- 3 tbsp sesame oil, toasted 1/2 cup apple cider vinegar
- 1/3 cup green onions, slice thin 2 tbsp raw honey
- 2 cloves garlic, chopped 1 tbsp soy sauce
- 1 tbsp ginger, fresh, peeled, grated 1 tsp chili powder
- 12 ounces dried brown rice or whole-wheat spaghetti
- 2 medium yellow, red and/or orange sweet peppers, cut in bite-size strips 2 cups snow peas
- 1 tbsp cilantro, fresh
DIRECTIONS
- In medium bowl stir together vinegar, green onions, honey, soy sauce, ginger, and garlic and chili powder Place the chicken strips into the mixture.
- Cover and marinate for 1 hour.
- Remove the chicken from the marinade and grill or bake at 350 degrees F for 20 minutes or until chicken is cooked.
- Meanwhile, cook the noodles in boiling water with added sea salt for about 14 minutes (or follow the instructions on the package) until just tender.
- Drain noodles well and rinse.
- Place the remainder of the marinade in skillet and heat.
- Add the peppers and the snow peas and lightly cook.
- Add the noodles and the chicken and cook for another two minutes.
- Season with sea salt, cilantro and pepper before serving.
*This is a great recipe to use if you have leftover cooked chicken breast or turkey breast meat. Skip the instructions for marinating and cooking the chicken and follow the instructions above by just adding the marinating ingredients to the skillet and heating and then add the vegetables as above.
