Two Step Sugar Free Cookies
Here is a great recipe for sugar free cookies that only require two very simple and natural ingredients!
Here is what you need: – 2 large, very ripe bananas (peel should have black spots), peeled OR 1/2 cup nut/seed butter* – 1 cup rolled oats (old-fashioned, rolled; not instant; preferably gluten-free) – pitted dates (enough for 2 dozen cookies) or any other sugar-free filling you may have on hand Optional Flavor Boosters:
• pinch of sea salt • 1 tsp. vanilla extract • 1/2 tsp. ground spices (e.g., cinnamon, cardamom, ginger, pumpkin pie spice) • 1/3 cup unsweetened flaked coconut
Instructions for Two Step Sugar-Free Cookie (also known as “thumbprints”): – Preheat oven to 350F. Line a baking sheet. – In a medium bowl, mash the bananas* with a fork until almost no lumps remain. – Stir in oats until well-blended. Let mixture stand for 5 minutes. – Mix in any optional ingredients, if using. – Drop by heaping tbsp. onto prepared baking sheet about 1 inch apart. – Make a “thumbprint in each tsp. of dough – Fill each with a date or other desired topping (like apple butter, nut butter, natural (sugar-free) jam or preserve – Bake in preheated oven for 13 to 15 minutes until golden brown and firm to touch at the center. – Transfer to cooling rack and cool completely.
